- 2 medium russet potatoes, diced small
- 1 small onion, chopped
- 1 bell pepper, chopped (any color)
- 1 cup shredded cheddar cheese
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden and fork-tender, about 10 minutes.
- Push potatoes to one side, then add ground beef. Cook until browned, breaking up with a spatula.
- Add onion, bell pepper, and garlic. Sauté everything together until veggies are soft.
- Season with paprika, oregano, salt, and pepper. Stir well to combine.
- Sprinkle cheddar cheese evenly on top. Cover with a lid for 2-3 minutes, or until melted.
- Serve hot straight from the skillet. Optional: garnish with chopped parsley.
Notes
- For extra flavor, add a splash of Worcestershire sauce while browning the beef.
