Description

Ingredients

  • 1 lb ground beef (85/15 or leaner)
  • 2 medium russet potatoes, diced small
  • 1 small onion, chopped
  • 1 bell pepper, chopped (any color)
  • 1 cup shredded cheddar cheese
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden and fork-tender, about 10 minutes.
  2. Push potatoes to one side, then add ground beef. Cook until browned, breaking up with a spatula.
  3. Add onion, bell pepper, and garlic. Sauté everything together until veggies are soft.
  4. Season with paprika, oregano, salt, and pepper. Stir well to combine.
  5. Sprinkle cheddar cheese evenly on top. Cover with a lid for 2-3 minutes, or until melted.
  6. Serve hot straight from the skillet. Optional: garnish with chopped parsley.

  • For extra flavor, add a splash of Worcestershire sauce while browning the beef.
