One Pot Kielbasa Pasta

Ingredients:

For the pasta dish:

  • 1 tbsp olive oil
  • 1 lb turkey or beef kielbasa (halal, sliced into rounds)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 ½ cups chicken broth (low sodium)
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • ¾ cup heavy cream
  • 8 oz penne or rotini pasta (uncooked)
  • 1 ½ cups shredded mozzarella cheese
  • 1 tsp paprika
  • Salt & pepper to taste
  • Fresh parsley for garnish (optional) 🌿

Directions:

  1. In a large deep skillet or pot, heat the olive oil over medium heat. Add the sliced kielbasa and sauté until browned, about 5-6 minutes. Remove and set aside.
  2. In the same pot, add chopped onion and bell pepper. Cook for 3-4 minutes until softened. Stir in the minced garlic and paprika, cook for another minute.
  3. Add the broth, diced tomatoes (with juice), heavy cream, uncooked pasta, and the browned kielbasa back to the pot. Stir everything to combine.
  4. Bring to a boil, then reduce the heat to low. Cover and simmer for about 12-15 minutes, stirring occasionally, until the pasta is cooked through and the sauce thickens.
  5. Stir in the shredded mozzarella cheese until melted and creamy. Season with salt and pepper as needed.
