Ingredients
- 1.5 lbs chicken thighs or breasts
- 1.5 lbs baby potatoes, halved
- 4 tablespoons olive oil
- 6–8 garlic cloves, minced
- 1 cup grated parmesan cheese
- 3 tablespoons unsalted butter, melted
- 2 teaspoons Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon onion powder
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup chicken broth
Instructions
1. Preheat oven to 400°F (200°C) and grease a baking dish
2. Toss potatoes with olive oil, garlic, salt, pepper, and paprika
3. Spread potatoes cut-side down and roast for 20 minutes

5. Coat chicken thoroughly with the mixture
6. Remove potatoes, push aside, and add chicken to the dish

10. Rest for 5 minutes, then garnish with parsley and lemon juice
