- 2 pounds boneless skinless chicken thighs
- 1 1/2 cups pineapple chunks
- 1/3 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons honey
- 4 cloves garlic minced
- 1 tablespoon fresh ginger grated
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons water
- 3 green onions sliced
- 1 tablespoon sesame seeds
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
- In a bowl whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, ginger, and black pepper.
- In a small bowl mix cornstarch and water to create a slurry then whisk it into the sauce.
- Place chicken thighs in a single layer in the baking dish.
- Pour two thirds of the teriyaki sauce over the chicken and coat evenly.
- Scatter pineapple chunks around and over the chicken.
- Bake uncovered for 30 minutes until the chicken begins to cook through.
- Remove from oven and spoon remaining sauce over the chicken.
- Return to oven and bake another 10 to 15 minutes until the chicken reaches 165°F (74°C).
- Optional: broil for 2 to 3 minutes to caramelize the glaze.
- Remove from oven and allow the chicken to rest for 5 minutes.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
- Chicken thighs remain juicier during baking but chicken breasts can also be used.
- Fresh pineapple gives brighter flavor though canned pineapple works well.
- For extra caramelization broil the chicken briefly at the end of cooking.
- Serve over steamed rice, noodles, or roasted vegetables.
- Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
