  • 2 pounds boneless skinless chicken thighs
  • 1 1/2 cups pineapple chunks
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 3 green onions sliced
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. In a bowl whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, ginger, and black pepper.
  3. In a small bowl mix cornstarch and water to create a slurry then whisk it into the sauce.
  4. Place chicken thighs in a single layer in the baking dish.
  5. Pour two thirds of the teriyaki sauce over the chicken and coat evenly.
  6. Scatter pineapple chunks around and over the chicken.
  7. Bake uncovered for 30 minutes until the chicken begins to cook through.
  8. Remove from oven and spoon remaining sauce over the chicken.
  9. Return to oven and bake another 10 to 15 minutes until the chicken reaches 165°F (74°C).
  10. Optional: broil for 2 to 3 minutes to caramelize the glaze.
  11. Remove from oven and allow the chicken to rest for 5 minutes.
  12. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • Chicken thighs remain juicier during baking but chicken breasts can also be used.
  • Fresh pineapple gives brighter flavor though canned pineapple works well.
  • For extra caramelization broil the chicken briefly at the end of cooking.
  • Serve over steamed rice, noodles, or roasted vegetables.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
