Description
Juicy baked balsamic chicken topped with melted mozzarella, roasted tomatoes, and a rich tangy glaze. A quick, flavorful, and elegant dinner perfect for weeknights or entertaining.
Ingredients
- 4 chicken breasts
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups cherry tomatoes
- 200g fresh mozzarella, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt to taste
- 1/2 teaspoon black pepper
- 1 tablespoon honey
- 1 small red onion, sliced
- Fresh basil leaves (handful)
- 1/4 cup Parmesan cheese (optional)
- 1 cup spinach (optional)
Instructions
1. Preheat oven to 200°C (400°F). Pat chicken dry and season with salt, pepper, oregano, and basil.
2. In a saucepan, combine balsamic vinegar, honey, and garlic. Simmer 8–10 minutes until thickened.
3. Heat olive oil in a skillet and sear chicken 3–4 minutes per side until golden.
4. Transfer chicken to a baking dish. Add tomatoes and sliced onions around it. Drizzle with half the glaze.
5. Bake for 15–20 minutes until chicken reaches 75°C (165°F).
6. Top each chicken breast with mozzarella and return to oven for 5 minutes until melted.
7. Drizzle remaining glaze, garnish with basil and optional Parmesan. Rest 5 minutes before serving.
Notes
- Use fresh mozzarella for best melting texture.
- Do not skip searing—it locks in flavor.
- Store leftovers in an airtight container for up to 4 days.
- Reheat with a splash of balsamic glaze to refresh flavor.
