Ingredients

  • 2 cups cooked chicken breast (cubed or shredded)
  • 1/2 cup BBQ sauce
  • 2 medium sweet potatoes, cubed
  • 2 tbsp olive oil
  • 2 cups cooked brown or white rice
  • 1 cup black beans
  • 1 cup corn
  • 1 avocado, sliced
  • 1 cup cherry tomatoes
  • 1/2 cup red onion, sliced
  • 1/4 cup fresh cilantro
  • Salt and pepper to taste
  • Spicy Mayo:
  • 1/2 cup mayonnaise
  • 12 tbsp sriracha or hot sauce
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • 1 tsp honey (optional)

Instructions

1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.

2. Toss sweet potatoes with olive oil, salt, pepper, and smoked paprika or garlic powder if desired.

3. Roast for 25–30 minutes, flipping halfway until golden and tender.

4. Cook chicken in a skillet over medium heat for 6–8 minutes per side until fully cooked.

5. Slice or shred chicken, then return to pan and mix with BBQ sauce over low heat for 3–5 minutes.

6. Prepare spicy mayo by whisking mayonnaise, sriracha, lime juice, garlic powder, and honey until smooth.

7. Cook rice according to package instructions and fluff with lime juice.

8. Warm black beans and corn in a pan or microwave.

9. Assemble bowls with rice, BBQ chicken, and roasted sweet potatoes.

10. Add beans, corn, tomatoes, onion, and avocado slices.

11. Drizzle spicy mayo over the bowl and garnish with fresh cilantro before serving.
