Ingredients
- 2 cups cooked shredded chicken breast
- 1/2 cup BBQ sauce
- 2 medium sweet potatoes, diced
- 2 tbsp olive oil
- 2 cups cooked brown rice
- 1 cup black beans
- 1 cup corn (fresh or frozen)
- 1 large avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 2 tbsp lime juice
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt or sour cream (optional)
Instructions
1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
2. Toss diced sweet potatoes with olive oil, garlic powder, smoked paprika, cumin, salt, and pepper.
3. Roast for 25–30 minutes, flipping halfway until golden and tender.
4. Cook chicken in a skillet over medium heat for 6–8 minutes per side until fully cooked, then shred.
5. Add BBQ sauce to shredded chicken and heat for 3–5 minutes until coated.
6. Prepare brown rice according to package instructions and fluff with lime juice.
7. Warm black beans and corn, seasoning lightly if desired.
8. Assemble bowls with rice as base, then add BBQ chicken and roasted sweet potatoes.
9. Top with beans, corn, tomatoes, onion, and avocado slices.
10. Finish with cilantro, yogurt or sour cream, and extra lime juice before serving.

- Use rotisserie chicken for a quicker option.
