Ingredients
- 1 large whole wheat tortilla
- 1/2 cup Greek yogurt
- 1 scoop vanilla protein powder
- 1/2 cup fresh blueberries
- 2 tablespoons cream cheese optional
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 teaspoon butter or coconut oil
- 1 teaspoon chia seeds optional
- 2 tablespoons granola optional
- 1 tablespoon almond butter optional
Instructions
1. In a small bowl mix Greek yogurt protein powder cream cheese honey vanilla extract and cinnamon until smooth.
2. Rinse blueberries and gently pat dry. Lightly mash a few berries if desired.
3. Lay the tortilla flat on a clean surface.
4. Spread the yogurt protein mixture evenly across half of the tortilla.
5. Scatter blueberries over the filling and add chia seeds or granola if using.
6. Fold the tortilla in half and press gently.
7. Heat a nonstick skillet over medium heat and add butter or coconut oil.
8. Place the quesadilla in the skillet and cook for about 2 to 3 minutes until golden.
9. Flip carefully and cook the other side for another 2 minutes until lightly crisp.
10. Transfer to a cutting board and allow to rest for one minute.
11. Slice into wedges and serve with honey almond butter or extra blueberries.
