Description

Blueberry Greek Yogurt Bites are creamy, high-protein, freezer-friendly breakfast snacks made with Greek yogurt, fresh blueberries, and natural sweeteners. Perfect for meal prep and busy mornings.


Ingredients

  • 2 cups plain Greek yogurt (full-fat or 2%)
  • 1 cup fresh blueberries
  • 23 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest (optional)
  • 1 tablespoon chia seeds (optional)
  • 1/4 cup granola (optional)
  • 2 tablespoons almond butter or peanut butter (optional swirl)
  • 2 tablespoons mini dark chocolate chips (optional)
  • 2 tablespoons shredded coconut (optional)
  • Pinch of sea salt
  • 1 scoop protein powder (optional)

Instructions

  1. Line a baking sheet with parchment paper or use a silicone mini muffin tray.
  2. In a mixing bowl, stir together Greek yogurt, honey or maple syrup, vanilla extract, lemon zest, and a pinch of sea salt until smooth.
  3. Whisk in protein powder if using until fully incorporated.
  4. Gently fold in blueberries. Lightly mash a few for a swirl effect if desired.
  5. Mix in optional ingredients like chia seeds, chocolate chips, or coconut.
  6. If using granola, sprinkle a small amount into each mold before adding yogurt mixture.
  7. Spoon 1–2 tablespoons of mixture into small rounds on prepared sheet or into molds.
  8. Smooth tops with the back of a spoon.
  9. Freeze for at least 2–3 hours until completely firm.
  10. Transfer frozen bites to an airtight freezer-safe container for storage.
  11. Let sit at room temperature for 2–3 minutes before serving for best texture.

  • Store in freezer up to 2 months in an airtight container.
  • Do not refrigerate long-term as bites will soften.
