Description

Boston Cream Pie Cookie Bites combine soft vanilla cookie cups, silky pastry cream, and rich chocolate ganache into a bite-sized dessert that’s both elegant and easy to make.


Ingredients

  • All-purpose flour (1 ½ cups / 190g)
  • Unsalted butter (½ cup / 115g, softened)
  • Granulated sugar (¾ cup / 150g)
  • Egg (1 large)
  • Vanilla extract (2 tsp)
  • Baking powder (1 tsp)
  • Salt (¼ tsp)
  • Whole milk (2 cups / 480ml)
  • Egg yolks (3 large)
  • Cornstarch (3 tbsp)
  • Sugar for custard (½ cup / 100g)
  • Butter (1 tbsp)
  • Dark chocolate (150g)
  • Heavy cream (½ cup / 120ml)
  • Powdered sugar (optional)
  • Fresh berries (optional)

Instructions

1. Preheat oven to 180°C (350°F) and grease a mini muffin tin. Cream butter and sugar until fluffy, then mix in egg and vanilla.

2. Whisk flour, baking powder, and salt separately, then combine with wet ingredients to form dough.

3. Roll dough into balls, place in muffin tin, and press to form cups. Bake 12–15 minutes until golden, then reshape centers and cool.

4. Heat milk until steaming. Whisk egg yolks, sugar, and cornstarch, then slowly add warm milk while whisking.

5. Return mixture to heat and cook until thickened. Stir in butter and vanilla, then chill.

6. Heat cream and pour over chopped chocolate. Stir until smooth to create ganache.

7. Fill cookie cups with pastry cream, then top with chocolate ganache.

8. Chill for 15–20 minutes before serving.

Notes

  • Use room temperature ingredients for best texture.
  • Do not overbake cookie cups to keep them soft.
  • Chill pastry cream fully before assembling.
