Description
This creamy Boursin pasta recipe brings together roasted cherry tomatoes, garlic & herb Boursin cheese, and tender pasta for a simple, indulgent dinner in under an hour.

- 5 oz Garlic & Herb Boursin cheese
- 3 cups cherry tomatoes
- 1/4 cup thinly sliced red onion
- 1 tablespoon olive oil
- 1/2 teaspoon Italian seasoning
- 8 oz pasta (I use rotini chickpea pasta)
- 1 oz freshly grated Parmesan cheese
Instructions
- Preheat oven to 350°F.
- Remove Boursin cheese from wrapper and place it in the center of a medium casserole dish.
- Add cherry tomatoes and red onion around the cheese. Drizzle with olive oil and sprinkle with Italian seasoning.
- Bake for 35 minutes or until tomatoes are softened and Boursin is melty.
- Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package instructions.
- Once pasta is drained, stir the roasted Boursin and vegetables until smooth and creamy.
- Add cooked pasta and Parmesan to the dish. Toss to combine and coat.
- Serve warm, optionally garnished with fresh herbs or more Parmesan.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat gently with a splash of milk or pasta water to restore creaminess.
Add cooked chicken or sautéed vegetables for variations.
