Description

This creamy Boursin pasta recipe brings together roasted cherry tomatoes, garlic & herb Boursin cheese, and tender pasta for a simple, indulgent dinner in under an hour.


Ingredients

  • 5 oz Garlic & Herb Boursin cheese
  • 3 cups cherry tomatoes
  • 1/4 cup thinly sliced red onion
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 8 oz pasta (I use rotini chickpea pasta)
  • 1 oz freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F.
  2. Remove Boursin cheese from wrapper and place it in the center of a medium casserole dish.
  3. Add cherry tomatoes and red onion around the cheese. Drizzle with olive oil and sprinkle with Italian seasoning.
  4. Bake for 35 minutes or until tomatoes are softened and Boursin is melty.
  5. Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package instructions.
  6. Once pasta is drained, stir the roasted Boursin and vegetables until smooth and creamy.
  7. Add cooked pasta and Parmesan to the dish. Toss to combine and coat.
  8. Serve warm, optionally garnished with fresh herbs or more Parmesan.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat gently with a splash of milk or pasta water to restore creaminess.

Add cooked chicken or sautéed vegetables for variations.
