  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 1/2 cup buffalo sauce (divided)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 810 slider buns (brioche or potato)
  • 1/2 cup blue cheese crumbles (optional)
  • 1/2 cup shredded mozzarella or cheddar (optional)
  • 1 cup coleslaw mix
  • 1/4 cup ranch or blue cheese dressing
  • 1 tablespoon melted butter

Instructions

  1. In a large bowl, combine ground chicken, egg, panko, garlic powder, onion powder, paprika, salt, pepper, and 1/4 cup buffalo sauce. Mix gently until just combined.
  2. Divide mixture into 8–10 equal portions and shape into slider-sized patties slightly wider than the buns.
  3. Heat a lightly oiled skillet over medium heat. Cook patties 4–5 minutes per side until golden and internal temperature reaches 165°F (74°C).
  4. Brush or toss warm patties with remaining 1/4 cup buffalo sauce.
  5. Preheat oven to 350°F (175°C). Brush buns with melted butter and toast 3–5 minutes until lightly golden.
  6. Assemble sliders with buffalo chicken patties, cheese if using, and ranch-dressed coleslaw. Serve warm.
