- 2 tablespoons olive oil

- 3 cloves garlic, minced
- 1 small shallot, finely diced
- 2 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 3/4 cup low-sodium chicken broth
- 3/4 cup heavy cream (or half-and-half for lighter option)
- 1 teaspoon fresh thyme, chopped
- 1 tablespoon lemon juice
- 1/4 cup freshly grated Parmesan cheese (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Pat chicken breasts dry. Slice or pound to even 3/4-inch thickness if needed.
- Season both sides with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken 5-6 minutes per side until golden and internal temperature reaches 165°F. Remove and rest under foil.
- Reduce heat to medium. Add butter, then sauté shallot for 2-3 minutes until softened.
- Add garlic and cook 30 seconds until fragrant.
- Pour in chicken broth and scrape browned bits from pan. Simmer 3-4 minutes.
- Whisk in Dijon mustard and whole grain mustard.
- Lower heat and stir in heavy cream. Simmer 4-5 minutes until slightly thickened.
- Add thyme, lemon juice, and Parmesan if using. Adjust seasoning.
- Return chicken to skillet and spoon sauce over top. Simmer 3-4 minutes.
- Garnish with fresh parsley and serve warm.
