Ingredients

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic, minced
  • 1 small shallot, finely diced
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 3/4 cup low-sodium chicken broth
  • 3/4 cup heavy cream (or half-and-half for lighter option)
  • 1 teaspoon fresh thyme, chopped
  • 1 tablespoon lemon juice
  • 1/4 cup freshly grated Parmesan cheese (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat chicken breasts dry. Slice or pound to even 3/4-inch thickness if needed.
  2. Season both sides with salt, pepper, garlic powder, and paprika.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Sear chicken 5-6 minutes per side until golden and internal temperature reaches 165°F. Remove and rest under foil.
  5. Reduce heat to medium. Add butter, then sauté shallot for 2-3 minutes until softened.
  6. Add garlic and cook 30 seconds until fragrant.
  7. Pour in chicken broth and scrape browned bits from pan. Simmer 3-4 minutes.
  8. Whisk in Dijon mustard and whole grain mustard.
  9. Lower heat and stir in heavy cream. Simmer 4-5 minutes until slightly thickened.
  10. Add thyme, lemon juice, and Parmesan if using. Adjust seasoning.
  11. Return chicken to skillet and spoon sauce over top. Simmer 3-4 minutes.
  12. Garnish with fresh parsley and serve warm.
