Chicken Caesar Smash Tacos feature seasoned ground chicken smashed onto tortillas, seared until golden, then topped with crisp romaine, creamy Caesar dressing, Parmesan, and fresh lemon. This high-protein, easy weeknight dinner is ready in 30 minutes.


Ingredients

  • 68 small flour tortillas
  • 1 1/2 pounds ground chicken (lean, not extra-lean)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 3 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 3/4 cup freshly grated Parmesan cheese
  • 12 lemons, cut into wedges
  • 1/2 cup croutons, lightly crushed
  • 2 tablespoons fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

1. In a bowl, toss chopped romaine with Caesar dressing and half of the Parmesan. Add crushed croutons and refrigerate.

2. Divide ground chicken into 6-8 loose portions.

3. Preheat a cast-iron skillet over medium-high heat and add olive oil.

4. Press one portion of chicken thinly across a tortilla, spreading close to the edges.

5. Season chicken side with salt, pepper, garlic powder, onion powder, Italian seasoning, and red pepper flakes if using.

6. Place tortilla chicken-side down in the skillet and cook for 3-4 minutes until cooked through and lightly golden.

7. Flip so tortilla side is down and cook another 2 minutes until golden and slightly crisp.

8. Sprinkle Parmesan over hot chicken and remove from skillet. Rest 1-2 minutes.

9. Top with chilled Caesar salad mixture, extra Parmesan, lemon juice, and parsley.

10. Fold gently and serve immediately.
