Description
Chicken Fajita Quesadillas are crispy, cheesy, and packed with bold Tex-Mex flavor. Tender seasoned chicken, sautéed peppers and onions, and melted cheddar and Monterey Jack cheese are grilled inside golden tortillas for a quick and satisfying meal.

- 2 medium chicken breasts, sliced into strips
- 4 large flour tortillas
- 2 medium bell peppers, sliced
- 1 medium yellow onion, sliced
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh lime juice
- 2 tablespoons chopped fresh cilantro (optional)
- 1 tablespoon butter
Instructions
- Slice chicken breasts into thin strips. Slice bell peppers and onion and mince the garlic.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and season with chili powder, cumin, paprika, salt, and black pepper.
- Cook chicken for 5–6 minutes until browned and fully cooked.
- Add minced garlic and cook for about 30 seconds until fragrant.
- Add sliced bell peppers and onion. Cook 4–5 minutes until slightly tender.
- Squeeze fresh lime juice over the mixture and stir. Remove from heat.
- Heat a clean skillet over medium heat and melt a small amount of butter.
- Place one tortilla in the skillet and sprinkle cheese on half of the tortilla.
- Add a portion of the chicken fajita mixture and top with more cheese.
- Fold tortilla in half and cook 2–3 minutes until golden brown. Flip and cook the other side until cheese melts.
- Remove from skillet, rest for 1 minute, then slice into wedges.
- Repeat with remaining tortillas and filling. Garnish with fresh cilantro and serve hot.
Notes
- Use freshly shredded cheese for better melting.
- Add jalapeños or hot sauce for extra spice.
- Serve with salsa, guacamole, or sour cream.
- Reheat quesadillas in a skillet for best crispy texture.
- You can prepare the chicken fajita filling ahead of time for faster cooking.
