Ingredients
- 500g chicken breast sliced
- 2 cups cooked rice
- 3 bell peppers sliced
- 1 large onion sliced
- 2 tbsp olive oil
- 3 cloves garlic minced
- 2 tbsp lime juice
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp oregano
- Salt to taste
- 1/2 tsp black pepper
- 1/4 cup cilantro chopped
- 1 avocado sliced
- 1/2 cup shredded cheese
- Greek yogurt or sour cream optional
Instructions
1. Cook rice according to package instructions and keep warm
2. Slice chicken and season with spices oil and lime juice
3. Heat skillet and cook chicken until golden and cooked through
4. Remove chicken and set aside
5. Sauté onions and bell peppers until soft and slightly charred
6. Add garlic and cook briefly
7. Return chicken to skillet and mix well
8. Adjust seasoning and add remaining lime juice
9. Assemble bowls with rice base
10. Top with chicken and vegetables
11. Add avocado yogurt cheese and cilantro before serving
Notes
- Marinate chicken longer for deeper flavor
- Use brown rice for a healthier option
- Add beans or corn for extra texture
