Description

Chicken Fajita Sliders are mini Tex-Mex sandwiches filled with juicy seasoned chicken, sautéed peppers and onions, and melted cheese baked inside soft slider buns. Perfect for parties, family dinners, or game day snacks.


Ingredients

  • 2 medium chicken breasts, diced or sliced
  • 12 slider buns
  • 2 bell peppers, sliced
  • 1 medium yellow onion, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • 2 tablespoons butter, melted
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Slice chicken into small strips or bite-size pieces. Slice bell peppers and onion and mince the garlic.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add chicken and season with chili powder, cumin, paprika, salt, and black pepper.
  3. Cook chicken for 5–6 minutes until fully cooked and lightly browned.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Add sliced peppers and onions and cook for 4–5 minutes until slightly tender.
  6. Stir in fresh lime juice and remove from heat.
  7. Preheat oven to 350°F (175°C). Grease a baking dish.
  8. Slice the slider buns horizontally and place the bottom half in the baking dish.
  9. Spread the chicken fajita mixture evenly over the buns.
  10. Sprinkle cheddar and Monterey Jack cheese over the filling.
  11. Place the top buns over the filling and brush with melted butter.
  12. Cover with foil and bake 10 minutes. Remove foil and bake another 5 minutes until golden.
  13. Slice along the bun seams and garnish with cilantro before serving.

Notes

  • Use freshly shredded cheese for the best melt.
  • Add jalapeños for extra heat.
  • Serve with salsa, guacamole, or sour cream.
  • You can prepare the chicken fajita filling ahead of time.
  • Reheat sliders in the oven for best texture.
