Ingredients
- 500g chicken breast sliced
- 2 cups cooked brown rice
- 1 cup black beans
- 1 cup corn
- 1 cup cherry tomatoes halved
- 1/2 red onion diced
- 2 tbsp olive oil
- 3 cloves garlic minced
- 2 tbsp lime juice
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp oregano
- Salt to taste
- Black pepper to taste
- 1 avocado sliced
- Greek yogurt or sour cream optional
- 1/4 cup fresh cilantro chopped
Instructions
1. Cook brown rice according to package instructions
2. Slice chicken and season with oil spices garlic salt pepper and lime juice
3. Let chicken marinate for 10 to 15 minutes
4. Heat skillet over medium high heat
5. Cook chicken for 4 to 5 minutes without moving
6. Flip and cook another 4 to 6 minutes until fully cooked
7. Prepare toppings including beans corn tomatoes onion and avocado
8. Remove chicken and add remaining lime juice
9. Assemble bowls with rice chicken and toppings
10. Add yogurt or sour cream and garnish with cilantro
11. Serve immediately or store for meal prep
Notes
- Use freshly squeezed lime juice for best flavor
- Adjust spice level with chili powder or add jalapenos
- Store fresh toppings separately for meal prep
- Reheat rice and chicken with a splash of water
