This Chipotle Chicken Sweet Potato Rice Bowl is a vibrant, high-protein dinner packed with smoky flavor, wholesome ingredients, and balanced nutrition.
Ingredients
2 boneless skinless chicken breasts
1 tsp chipotle powder
2 cloves garlic minced
2 tbsp olive oil
2 medium sweet potatoes diced
1 cup brown rice
1/2 cup black beans
1/4 cup red onion diced
1 avocado sliced
Fresh cilantro chopped
Juice of 1 lime
Salt and pepper to taste
Optional jalapeños
Instructions
1. Mix chipotle powder garlic salt and olive oil then coat chicken and marinate 15 minutes
2. Preheat oven to 400°F and roast diced sweet potatoes with oil salt and pepper for 25 minutes
3. Cook brown rice according to package instructions
4. Heat skillet and cook chicken 6–7 minutes per side until fully cooked then slice
5. Assemble bowl with rice sweet potatoes chicken black beans and onion
6. Top with avocado cilantro lime juice and optional jalapeños
Notes
Use quinoa instead of rice for variation
Add Greek yogurt sauce for creaminess
Store leftovers up to 4 days in fridge
