  • 1 ham hock (optional)

Instructions

1. Chop cabbage, dice onion, mince garlic, and cut bacon into small pieces.

2. Heat a large skillet over medium heat and cook bacon until crispy, about 6–8 minutes.

3. Remove bacon and set aside, leaving drippings in the pan.

4. Add diced onion to the pan and cook until soft and golden, about 5 minutes.

5. Add garlic and cook for 30 seconds until fragrant.

6. Add chopped cabbage and stir well to coat in bacon fat. Cook for 10 minutes until slightly softened.

7. Season with salt, pepper, smoked paprika, red pepper flakes, and sugar if using.

8. Add shredded carrots if desired and mix well.

9. Pour in chicken broth and add butter. Cover and cook on medium-low heat for 10–12 minutes.

10. Add ham hock during simmering if using for deeper flavor.

11. Remove lid and allow excess liquid to evaporate.

12. Return cooked bacon to the pan and stir.

13. Add apple cider vinegar and mix well.

14. Taste, adjust seasoning, and garnish with green onions before serving.
