Ingredients
- 3 cups rotisserie chicken, shredded
- 8–10 small corn or flour tortillas
- 1 tablespoon olive oil
- 2 teaspoons taco seasoning
- 1/4 cup chicken broth
- 1 tablespoon fresh lime juice
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 large avocado, sliced or guacamole
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1/4 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup sour cream or Greek yogurt
- Hot sauce or salsa (optional)
- Pickled jalapeños (optional)
- Lime wedges for serving
Instructions
1. Remove the meat from the rotisserie chicken and shred it into bite-sized pieces until you have about 3 cups.
2. Heat olive oil in a large skillet over medium heat.
3. Add the shredded chicken and cook for about 2–3 minutes until warmed through.
4. Sprinkle taco seasoning over the chicken and pour in the chicken broth.
5. Stir the chicken mixture and allow it to simmer for 3–4 minutes so the spices coat the chicken evenly.
6. Squeeze fresh lime juice over the chicken and stir well.
7. Warm tortillas in a dry skillet for about 20–30 seconds per side or in the microwave wrapped in a damp paper towel.
8. Prepare the toppings by chopping lettuce, dicing tomatoes, slicing avocado, and chopping cilantro.
9. Fill each warm tortilla with a scoop of seasoned rotisserie chicken.
10. Top with lettuce, tomatoes, avocado, shredded cheese, red onion, cilantro, and sour cream.
11. Add salsa, hot sauce, or pickled jalapeños if desired.
12. Serve immediately with lime wedges on the side.

- Corn tortillas provide a more traditional taco flavor while flour tortillas are softer and more flexible.
- For extra flavor add pickled onions or chipotle sauce.
- Store leftover chicken filling in an airtight container in the refrigerator for up to 4 days.
