Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons butter
- 6 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- Salt to taste
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 small onion, finely chopped
- 1 tablespoon flour
- 1 cup spinach (optional)
- Fresh parsley for garnish
Instructions
1. Pat chicken breasts dry and season with salt, pepper, and paprika.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden. Remove and set aside.
3. In the same skillet, melt butter. Add chopped onion and sauté for 2–3 minutes until soft. Add garlic and cook 30 seconds.
4. Sprinkle flour into the pan and stir for 1 minute. Slowly whisk in chicken broth, then add heavy cream.
5. Stir in Parmesan cheese and Italian seasoning. Simmer 3–5 minutes until sauce thickens.
6. Return chicken to skillet and spoon sauce over it. Simmer 5–7 minutes until fully cooked (75°C / 165°F).
7. Add spinach if desired and let it wilt. Garnish with parsley and extra Parmesan before serving.
Notes
- Do not burn the garlic; cook it briefly for best flavor.
- Add extra broth or cream when reheating to maintain a smooth sauce.
- Use freshly grated Parmesan for better melting and taste.
- Pairs well with pasta, mashed potatoes, or rice.
