Ingredients

  • 2 large chicken breasts, sliced or pounded thin
  • 1½ cups white rice (uncooked)
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • ¾ cup Parmesan cheese, freshly grated
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • 2 tablespoons fresh parsley, chopped
  • 1 cup spinach (optional)
  • 1 teaspoon lemon juice

Instructions

1. Rinse rice under cold water and cook with 3 cups water and a pinch of salt. Simmer for 15 minutes, then rest for 5 minutes and fluff.

2. Season chicken with salt, pepper, paprika, and onion powder.

3. Heat olive oil in a skillet over medium-high heat and sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.

4. Reduce heat to medium, add butter, then sauté garlic for 30 seconds until fragrant.

5. Pour in chicken broth and scrape up browned bits. Simmer for 2–3 minutes.

6. Add heavy cream and cook for 3–4 minutes until slightly thickened.

7. Stir in Parmesan cheese gradually until smooth and creamy.

8. Return chicken to the skillet and simmer for 5–7 minutes.

9. Add spinach if using and cook until wilted.

10. Stir in lemon juice and adjust seasoning.

11. Serve hot over rice and garnish with parsley.
