Ingredients
- 4 large boneless skinless chicken breasts (about 2 pounds)
- 3 cups fresh spinach, chopped
- 1 cup artichoke hearts, chopped and drained
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
1. Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
2. Place chicken breasts in the baking dish in a single layer. Pound or slice them to even thickness if needed.
3. Season the chicken with salt, black pepper, and onion powder.
4. In a large mixing bowl combine softened cream cheese, sour cream, and mayonnaise until smooth.
5. Add minced garlic, Italian seasoning, and grated parmesan cheese and mix well.
6. Fold in chopped spinach and artichoke hearts until evenly combined.
7. Stir in half of the shredded mozzarella cheese.
8. Spread the spinach artichoke mixture evenly over each chicken breast.
9. Sprinkle the remaining mozzarella cheese on top.
10. Bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F (74°C).
11. Optional: Broil for 2–3 minutes to create a lightly golden cheesy crust.
12. Remove from oven, rest for 5 minutes, then garnish with fresh parsley before serving.

- If chicken breasts are thick, slice them horizontally for faster and more even cooking.
- Frozen spinach can be used if well-drained.
