Crockpot Bourbon Chicken is a sweet and savory slow cooker dinner made with tender chicken thighs simmered in a rich sauce of soy, garlic, honey, and brown sugar. Perfect for an easy comforting meal.
Ingredients
- 2 lbs chicken thighs
- 1/2 cup low-sodium soy sauce
- 1/2 cup brown sugar
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 cup apple cider vinegar
- 1/2 cup chicken broth
- 1 tsp sesame oil
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 2 green onions, chopped
- Cooked rice or quinoa for serving
Instructions
1. In a bowl, whisk together soy sauce, brown sugar, honey, garlic, ginger, apple cider vinegar, chicken broth, and sesame oil.
2. Place chicken thighs in a zip-top bag or dish and pour marinade over them. Marinate for at least 30 minutes.
3. Heat a skillet over medium-high heat and sear chicken for 3-4 minutes per side until golden brown.
4. Transfer chicken to the crockpot and pour remaining marinade over the top.
5. Season with black pepper and red pepper flakes.
6. Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken is tender.
7. Shred the chicken or leave whole, then stir in chopped green onions.
8. Serve over rice or quinoa with extra sauce.

- Store leftovers in the refrigerator for up to 4 days in an airtight container.
- Freeze for up to 3 months without rice for best texture.
