This Crockpot Cheesesteak Tortellini is a rich and creamy comfort food dish made with tender beef, peppers, and cheesy tortellini. It’s an easy dump and go slow cooker recipe perfect for busy nights.
Ingredients
- 20 oz cheese tortellini
- 1 lb beef (sliced steak or ground beef)
- 1 green bell pepper sliced
- 1 medium onion sliced
- 3 cloves garlic minced
- 2 cups beef broth
- 8 oz cream cheese cubed
- 1 cup heavy cream
- 1 1/2 cups mozzarella cheese shredded
- 1 cup provolone cheese shredded
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- Salt to taste
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 cup mushrooms sliced (optional)
- 2 tbsp fresh parsley chopped
Instructions
1. Brown beef in skillet with olive oil for extra flavor
2. Add beef to crockpot with bell peppers onion garlic and mushrooms
3. Pour in beef broth and Worcestershire sauce
4. Add Italian seasoning salt and pepper and stir gently
5. Cook on LOW for 4–5 hours or HIGH for 2–3 hours
6. Add cream cheese and heavy cream and stir until smooth
7. Stir in tortellini and cook for 20–30 minutes until tender
8. Sprinkle mozzarella and provolone cheese on top
9. Cover until cheese melts then stir gently
10. Garnish with fresh parsley and serve warm
Notes
- Browning beef adds extra flavor but is optional
- Do not overcook tortellini to avoid mushy texture
- Add broth or cream when reheating if sauce thickens
- Store leftovers up to 4 days in fridge
- Freeze sauce separately for best results
