Ingredients

  • 1.5 lb boneless skinless chicken breast
  • 2 cans white beans, drained and rinsed
  • 7 oz cream cheese, softened
  • 34 cups chicken broth
  • 1 can diced green chilies
  • 1 cup corn (optional)
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp oregano
  • Salt to taste
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lime juice

Instructions

1. Dice onion, mince garlic, and prepare ingredients.

2. Place chicken in crockpot and add beans, onion, garlic, chilies, and corn.

3. Sprinkle spices evenly over ingredients.

4. Pour in chicken broth to cover mixture.

5. Add cream cheese in chunks on top.

6. Cover and cook on low for 6–7 hours or high for 4–5 hours.

7. Remove chicken and shred with forks.

8. Return chicken to crockpot and stir until creamy.

9. Add lime juice and cilantro, then adjust seasoning.

10. Let rest 5–10 minutes before serving.
