Description
This Crockpot Ground Beef Pasta is a rich, hearty slow cooker dinner made with savory beef, tomatoes, herbs, and perfectly cooked pasta. It’s an easy comfort meal perfect for busy weeknights.
Ingredients
- 1 lb ground beef
- 12 oz pasta (penne or rotini)
- 1 medium onion diced
- 4 cloves garlic minced
- 1 can (28 oz) crushed tomatoes
- 1 can (15 oz) tomato sauce
- 1 cup beef broth
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt to taste
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1 cup mozzarella cheese shredded
- 1/2 cup Parmesan cheese grated
- 1 tbsp olive oil
- 1 cup bell peppers chopped (optional)
- 2 tbsp fresh basil or parsley chopped
Instructions
1. Heat olive oil in skillet and brown ground beef for 5–7 minutes
2. Add onion and cook until soft then add garlic and cook briefly
3. Drain excess fat and transfer mixture to crockpot
4. Add crushed tomatoes tomato sauce and beef broth
5. Stir in Italian seasoning paprika salt pepper and red pepper flakes
6. Add bell peppers if using and mix well
7. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours
8. Cook pasta separately until al dente and drain
9. Add pasta to crockpot and stir to coat with sauce
10. Top with mozzarella and Parmesan and cover until melted
11. Garnish with fresh herbs and serve warm
Notes
- Cook pasta separately to prevent it from becoming mushy
- Store leftovers in fridge for up to 4 days
- Freeze sauce separately for best texture
- Add broth when reheating to loosen sauce
- Customize with extra vegetables or different cheeses
