Description

These Crockpot Meatball Subs are loaded with juicy meatballs simmered in rich marinara sauce, topped with melted cheese, and served in toasted rolls. An easy and comforting slow cooker dinner perfect for any occasion.


Ingredients

Scale
  • 2430 meatballs (frozen or fresh)
  • 2 cups marinara sauce
  • 1 can (14 oz) crushed tomatoes
  • 4 cloves garlic minced
  • 1 small onion finely chopped
  • 1 tsp Italian seasoning
  • Salt to taste
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp sugar (optional)
  • 1 tbsp olive oil
  • 6 sub rolls or hoagie buns
  • 1 1/2 cups mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 2 tbsp fresh basil or parsley chopped
  • 2 tbsp butter (optional for toasting)

Instructions

1. Heat olive oil in skillet and sauté onion until soft

2. Add garlic and cook until fragrant

3. Transfer mixture to crockpot and add marinara and crushed tomatoes

4. Season with Italian seasoning salt pepper red pepper flakes and sugar

5. Add meatballs and stir to coat with sauce

6. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours

7. Preheat oven to 375°F and slice rolls

8. Butter and toast rolls for 5–7 minutes until golden

9. Place meatballs in rolls and spoon sauce over top

10. Sprinkle mozzarella and Parmesan cheese

11. Bake until cheese is melted and bubbly

12. Garnish with fresh herbs and serve warm

Notes

  • Use frozen or homemade meatballs depending on preference
  • Toast rolls to prevent soggy bread
  • Store meatballs and sauce separately for best results
  • Freeze meatballs and sauce up to 3 months
  • Reheat with a splash of water or broth if sauce thickens
