Description

Crunchy Napa Cabbage Slaw is a fresh and vibrant salad made with tender napa cabbage, crisp vegetables, toasted almonds, and a light sesame dressing. This quick Asian-inspired slaw adds refreshing crunch and flavor to grilled chicken, salmon, tofu, or noodle bowls.

  • 1 cup carrots, shredded
  • 1 cup red bell pepper, thinly sliced
  • 3 tablespoons green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup toasted almonds, sliced
  • 2 tablespoons toasted sesame seeds
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1 tablespoon lime juice
  • 1/4 teaspoon chili flakes (optional)

Instructions

1. Rinse the napa cabbage thoroughly and slice it into thin strips.

2. Place the shredded cabbage into a large mixing bowl.

3. Add shredded carrots, sliced red bell pepper, green onions, and chopped cilantro.

4. In a small bowl combine rice vinegar, soy sauce, sesame oil, olive oil, honey, lime juice, grated ginger, minced garlic, and chili flakes if using.

5. Whisk the dressing until smooth and well blended.

6. Pour the dressing over the cabbage mixture.

7. Toss the vegetables until evenly coated with the dressing.

8. Sprinkle toasted almonds and sesame seeds over the slaw.

9. Allow the salad to rest for 5 to 10 minutes so the flavors develop.

10. Toss lightly again and serve fresh.
