Description

Easy Balsamic Baked Chicken Breast is a healthy and flavorful dish made with juicy chicken marinated in balsamic vinegar, garlic, and herbs, then baked to tender perfection.


Ingredients

  • 23 large chicken breasts, boneless & skinless
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 cup cherry tomatoes, halved
  • Fresh basil for garnish
  • 12 cups spinach (optional)

Instructions

1. Preheat oven to 400°F (200°C) and prepare a baking dish.

2. In a bowl, whisk balsamic vinegar, olive oil, garlic, honey, Dijon mustard, Italian seasoning, salt, pepper, paprika, and onion powder.

3. Place chicken in the baking dish and coat evenly with marinade.

4. Let marinate for 15–30 minutes (or up to 2 hours for deeper flavor).

5. Add cherry tomatoes around the chicken.

6. Bake uncovered for 20–25 minutes until chicken reaches 165°F (75°C).

7. Baste chicken halfway through cooking with sauce.

8. Remove from oven and let rest for 5 minutes.

9. Optional: add spinach to wilt in the hot dish.

10. Garnish with fresh basil and serve.
