Ingredients

  • Chicken breast or thighs, cubed (1.5 lbs / 700g)
  • Plain yogurt (1 cup / 240g)
  • Garlic, minced (4 cloves)
  • Fresh lemon juice (2 tbsp)
  • Olive oil (2 tbsp)
  • Paprika (1 tsp)
  • Ground cumin (1 tsp)
  • Ground coriander (1 tsp)
  • Turmeric (1/2 tsp)
  • Salt (1–1.5 tsp)
  • Black pepper (1/2 tsp)
  • Fresh ginger, grated (1 tbsp)
  • Chili flakes (optional, 1/2 tsp)
  • Honey (optional, 1 tsp)
  • Bell peppers, chunked (2)
  • Red onion, chunked (1 large)

Instructions

1. In a bowl, mix yogurt, garlic, lemon juice, olive oil, and spices until smooth.

2. Cut chicken into evenly sized cubes and pat dry.

3. Add chicken to marinade and coat thoroughly.

4. Cover and refrigerate for 1–2 hours or overnight.

5. Soak wooden skewers in water for 20–30 minutes if needed.

6. Thread chicken, peppers, and onion onto skewers.

7. Preheat grill to medium-high heat (400–425°F).

8. Grill skewers for 10–15 minutes, turning occasionally until cooked through.

9. Check internal temperature reaches 165°F (75°C).

10. Let rest for 5 minutes and serve with fresh lemon juice if desired.
