Ingredients
- 4 boneless, skinless chicken breasts
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon honey
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- Salt to taste
- 1/2 teaspoon black pepper
- 2 large avocados, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt or sour cream (optional)
- 2 cups shredded lettuce (optional)
- Cooked rice or quinoa (optional for serving)
Instructions
1. Preheat a grill pan or skillet over medium-high heat.
2. In a bowl, whisk together lime juice, olive oil, garlic, honey, chili powder, paprika, cumin, salt, and pepper.
3. Place chicken in a dish or bag and coat with marinade. Let marinate for 15–20 minutes or up to 2 hours.
4. Remove chicken and cook for 5–7 minutes per side until fully cooked (165°F internal temperature).
5. Transfer chicken to a plate and let rest for 5 minutes.
6. Slice avocados, tomatoes, and red onion. Chop cilantro.
7. Place chicken on plates and top with avocado, tomatoes, onion, and cilantro.
8. Add yogurt or sour cream if desired and serve immediately.
