Description
Garlic Butter Roasted Cabbage Steaks are tender in the center and crispy on the edges. Roasted with garlic, butter, herbs, and optional parmesan, this easy vegetable recipe makes a perfect low-carb side dish or vegetarian main course.
Ingredients
- 1 large green cabbage
- 4 tablespoons unsalted butter, melted
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/4 cup grated parmesan cheese (optional)
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
- 1 teaspoon lemon juice (optional)
- 2 tablespoons breadcrumbs or panko (optional)
- Balsamic glaze for serving (optional)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Remove outer cabbage leaves and slice cabbage into 3/4 to 1 inch thick steaks while keeping the core intact.
3. Arrange cabbage steaks flat on the prepared baking sheet.
4. In a bowl mix melted butter, olive oil, garlic, salt, pepper, paprika, onion powder, garlic powder, and Italian seasoning.
5. Brush the garlic butter mixture generously over each cabbage steak.
6. Sprinkle parmesan cheese and breadcrumbs on top if using.
7. Roast cabbage steaks for 18 to 20 minutes.
8. Carefully flip each cabbage steak and brush with remaining garlic butter.
9. Return to oven and roast another 10 to 15 minutes until edges are crispy and caramelized.
10. Remove from oven and top with parsley, red pepper flakes, lemon juice, or balsamic glaze before serving.
Notes
- Keep cabbage slices thick so they hold together during roasting.
- Roast at high heat to achieve crispy caramelized edges.
- Add parmesan during the first roast for a crispy cheesy crust.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat in oven or air fryer to restore crispiness.
