Ingredients

  • Chicken thighs or breasts (1.5–2 lbs / 700–900g)
  • Baby potatoes, halved (1.5 lbs / 700g)
  • Parmesan cheese, grated (3/4 cup / 70g)
  • Garlic, minced (5–6 cloves)
  • Olive oil (3 tbsp)
  • Butter, melted (2 tbsp)
  • Italian seasoning (1 tsp)
  • Paprika (1 tsp)
  • Salt (1–1.5 tsp)
  • Black pepper (1/2 tsp)
  • Onion powder (1 tsp)
  • Garlic powder (1 tsp)
  • Fresh parsley, chopped (2 tbsp)
  • Lemon juice (optional, 1 tbsp)

Instructions

1. Preheat oven to 400°F (200°C) and prepare a baking sheet.

2. Toss halved potatoes with olive oil, garlic, salt, pepper, and paprika.

3. Spread potatoes cut-side down on the pan.

4. In a bowl, mix chicken with olive oil, melted butter, garlic, parmesan, and seasonings.

5. Place chicken on the same pan in a single layer.

6. Sprinkle extra parmesan over chicken and potatoes.

7. Bake for 35–45 minutes, flipping halfway through.

8. Optional: broil for 3–5 minutes for extra crispiness.

9. Rest for 5 minutes, then garnish with parsley and lemon juice before serving.
