Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss sweet potato cubes with 1 tablespoon olive oil, 1/2 teaspoon salt, smoked paprika, and black pepper.
- Spread in a single layer and roast for 25 to 30 minutes, flipping halfway, until tender and caramelized.
- Heat remaining olive oil in a skillet over medium-high heat.
- Add minced garlic and sauté for 30 seconds.
- Add ground beef and break apart with a spatula.
- Season with onion powder, remaining salt, smoked paprika, chili flakes, and black pepper.
- Cook for 7 to 10 minutes until fully browned and slightly crispy in spots. Drain excess grease if necessary.
- Warm hot honey briefly if needed for easy drizzling.
- Assemble bowls with spinach or arugula as the base.
- Top with roasted sweet potatoes and ground beef.
