Ingredients

  • 2 medium sweet potatoes, cubed (about 3 cups)
  • 1 pound lean ground beef (85–90% lean)
  • 1 to 2 ripe avocados, sliced
  • 3 to 4 tablespoons hot honey
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili flakes (optional)
  • 1 1/2 teaspoons salt, divided
  • 1/2 teaspoon black pepper
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 cups baby spinach or arugula
  • 1 tablespoon fresh lime juice
  • 1/4 cup feta cheese (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato cubes with 1 tablespoon olive oil, 1/2 teaspoon salt, smoked paprika, and black pepper.
  3. Spread in a single layer and roast for 25 to 30 minutes, flipping halfway, until tender and caramelized.
  4. Heat remaining olive oil in a skillet over medium-high heat.
  5. Add minced garlic and sauté for 30 seconds.
  6. Add ground beef and break apart with a spatula.
  7. Season with onion powder, remaining salt, smoked paprika, chili flakes, and black pepper.
  8. Cook for 7 to 10 minutes until fully browned and slightly crispy in spots. Drain excess grease if necessary.
  9. Warm hot honey briefly if needed for easy drizzling.
  10. Assemble bowls with spinach or arugula as the base.
  11. Top with roasted sweet potatoes and ground beef.
  12. Add sliced avocado.
  13. Drizzle generously with hot honey.
  14. Finish with red onion, herbs, feta if using, and a squeeze of lime juice.
  15. Serve immediately while warm.
