Ingredients
- 500g ground beef
- 2 medium sweet potatoes, diced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 medium onion, diced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- 1/2 teaspoon black pepper
- 8 small tortillas
- 1 avocado, sliced
- 1–2 tablespoons lime juice
- Fresh cilantro (handful)
- Greek yogurt or sour cream (optional)
Instructions
1. Preheat oven to 200°C (400°F). Toss diced sweet potatoes with olive oil, salt, pepper, and paprika. Roast for 20–25 minutes until tender and caramelized.
2. Heat a skillet over medium heat. Add olive oil and sauté diced onion for 2–3 minutes until softened. Add garlic and cook for 30 seconds.
3. Add ground beef and cook for 6–8 minutes, breaking it apart until browned.
4. Stir in chili powder, cumin, paprika, salt, and pepper. Let spices toast briefly.
5. Add roasted sweet potatoes to the skillet and mix well. Cook for 2–3 minutes to combine flavors.
6. Warm tortillas in a skillet or oven until soft.
7. Assemble tacos with beef and sweet potato mixture. Top with avocado, lime juice, cilantro, and optional yogurt or sour cream.
8. Serve immediately with extra lime wedges.
