Description
This healthy crockpot chicken noodle soup is warm, nourishing, and easy to prepare. Made with tender chicken, fresh vegetables, and a flavorful broth, it’s the perfect comfort meal for any day of the week.
Ingredients
- 1 lb boneless skinless chicken breast
- 1/2 lb chicken thighs (optional)
- 3 medium carrots, sliced
- 3 celery stalks, chopped
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 2 cups egg noodles (dry)
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- Salt to taste
- 1 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- 1 tbsp lemon juice
- 1 cup spinach or kale (optional)
Instructions
1. Chop carrots, celery, onion, and mince garlic. Trim chicken if needed.
2. Place chicken in crockpot and add vegetables, garlic, herbs, and spices.
3. Pour in chicken broth and drizzle olive oil over ingredients.
4. Cover and cook on low for 6–8 hours or high for 3–4 hours.
5. Remove chicken, shred with forks, and return to crockpot.
6. Add egg noodles and cook on high for 20–30 minutes until tender.
7. Stir in fresh parsley and lemon juice. Add spinach or kale if using.
8. Taste and adjust seasoning, then let rest for 5 minutes before serving.
Notes
- Store in fridge up to 4 days in airtight containers.
- Freeze without noodles for up to 3 months.
- Add fresh noodles when reheating for best texture.
- Adjust salt and lemon juice before serving leftovers.
