Ingredients
1 lb chicken thighs
1/4 cup honey
1/4 cup soy sauce
4 cloves garlic, minced
2 tbsp olive oil
1 bell pepper, chopped
1 zucchini, sliced
1 sweet potato, cubed
1/2 red onion, sliced
1 tsp dried thyme
Salt to taste
Black pepper to taste
Fresh parsley for garnish
Instructions
1. Preheat oven to 425°F (220°C).
2. In a bowl, mix honey, soy sauce, garlic, and olive oil to create marinade.
3. Reserve 1/4 cup of sauce for later.
4. Add chicken to marinade and coat well, then refrigerate for at least 30 minutes.
5. Prepare vegetables by chopping bell pepper, zucchini, sweet potato, and onion.
6. Place chicken and vegetables on a lined sheet pan.
7. Drizzle vegetables with olive oil and season with salt, pepper, and thyme.
8. Bake for 25-30 minutes until chicken is cooked through and veggies are tender.
9. Drizzle reserved sauce over everything and let rest for 5 minutes.
10. Garnish with fresh parsley and serve.
