Description

Hot Honey Cottage Cheese Sweet Potato Beef Bowl is a high-protein, balanced dinner made with roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and a drizzle of sweet and spicy hot honey.


Ingredients

  • 2 medium sweet potatoes, cubed (about 3 cups)
  • 1 pound lean ground beef (85–90% lean)
  • 1 1/2 cups cottage cheese
  • 3 to 4 tablespoons hot honey
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili flakes (optional)
  • 1 1/2 teaspoons salt, divided
  • 1/2 teaspoon black pepper
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1 avocado, sliced (optional)
  • 2 cups baby spinach or arugula
  • 1 tablespoon fresh lime juice

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato cubes with 1 tablespoon olive oil, 1/2 teaspoon salt, smoked paprika, and black pepper.
  3. Spread in a single layer and roast for 25 to 30 minutes, flipping halfway, until tender and caramelized.
  4. Heat remaining olive oil in a skillet over medium-high heat.
  5. Add minced garlic and sauté for 30 seconds until fragrant.
  6. Add ground beef, breaking apart with a spatula. Season with onion powder, chili flakes, remaining salt, and pepper.
  7. Cook for 7 to 10 minutes until browned and fully cooked. Drain excess grease if needed.
  8. Warm hot honey slightly if thick for easier drizzling.
  9. Assemble bowls with spinach or arugula as the base.
  10. Add roasted sweet potatoes and seasoned beef.
  11. Spoon cottage cheese into the center.
  12. Drizzle hot honey over the bowl.
  13. Top with red onion, herbs, avocado, and a squeeze of lime juice.
  14. Serve immediately while warm.
