Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss sweet potato cubes with 1 tablespoon olive oil, 1/2 teaspoon salt, smoked paprika, and black pepper.
- Spread in a single layer and roast for 25 to 30 minutes, flipping halfway, until tender and caramelized.
- Heat remaining olive oil in a skillet over medium-high heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add ground beef, breaking apart with a spatula. Season with onion powder, chili flakes, remaining salt, and pepper.
- Cook for 7 to 10 minutes until browned and fully cooked. Drain excess grease if needed.
- Warm hot honey slightly if thick for easier drizzling.
- Assemble bowls with spinach or arugula as the base.
- Add roasted sweet potatoes and seasoned beef.
- Spoon cottage cheese into the center.
- Drizzle hot honey over the bowl.
- Top with red onion, herbs, avocado, and a squeeze of lime juice.
