Instructions
- Zest and juice the lemon, avoiding the white pith.
- Add almond milk to the blender first.
- Add Greek yogurt, frozen blueberries, banana, lemon juice, lemon zest, chia seeds, flaxseed, vanilla extract, and optional spinach.
- Blend on high speed for about 60 seconds until smooth and creamy.
- Adjust thickness with more almond milk or ice as needed.
- Taste and add honey or maple syrup if extra sweetness is desired.
- Blend briefly again if adjusting sweetness.
- Pour into a glass and serve immediately.
