Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup freshly grated parmesan cheese
  • 1/2 tsp red pepper flakes (optional)
  • 8 oz penne or spaghetti pasta
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the pasta in salted water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Season chicken with salt, pepper, paprika, and Italian seasoning.
  3. In a large skillet, heat olive oil and sear the chicken on both sides until golden and cooked through. Remove and set aside.
  4. In the same skillet, sauté minced garlic for 30 seconds. Add sun-dried tomatoes and cook for another minute.
  5. Pour in chicken broth and heavy cream. Simmer gently, then stir in parmesan cheese until melted and smooth.
  6. Slice the cooked chicken and return to the skillet. Add cooked pasta and toss to combine. Use reserved pasta water if needed to loosen the sauce.
  7. Top with fresh herbs and red pepper flakes. Serve hot.
