- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper to taste
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup freshly grated parmesan cheese
- 1/2 tsp red pepper flakes (optional)
- 8 oz penne or spaghetti pasta
- Fresh basil or parsley, for garnish
Instructions
- Cook the pasta in salted water until al dente. Reserve 1/2 cup of pasta water before draining.
- Season chicken with salt, pepper, paprika, and Italian seasoning.
- In a large skillet, heat olive oil and sear the chicken on both sides until golden and cooked through. Remove and set aside.
- In the same skillet, sauté minced garlic for 30 seconds. Add sun-dried tomatoes and cook for another minute.
- Pour in chicken broth and heavy cream. Simmer gently, then stir in parmesan cheese until melted and smooth.
- Slice the cooked chicken and return to the skillet. Add cooked pasta and toss to combine. Use reserved pasta water if needed to loosen the sauce.
- Top with fresh herbs and red pepper flakes. Serve hot.
