Description

Mediterranean Chicken Rice Bowl with Tzatziki is a healthy and vibrant dinner packed with grilled chicken, fresh vegetables, fluffy rice, and a creamy homemade tzatziki sauce.


Ingredients

  • 1 lb chicken breast
  • 1 cup brown rice
  • 2 cups water
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 cups spinach (optional)
  • Tzatziki Sauce:
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • Pinch of salt

Instructions

1. Marinate chicken with olive oil, garlic, cumin, paprika, salt, and pepper for at least 15 minutes.

2. Cook brown rice by bringing water to a boil, adding rice, then simmering covered for 30-35 minutes until tender.

3. Heat a skillet or grill pan and cook chicken for 6-7 minutes per side until fully cooked. Let rest, then slice.

4. Prepare tzatziki by mixing Greek yogurt, lemon juice, dill, and salt in a bowl.

5. Assemble bowls by adding cooked rice, sliced chicken, cucumber, tomatoes, olives, and spinach if using.

6. Drizzle tzatziki over the top.

7. Sprinkle feta cheese and parsley before serving.
