Description
This one-pot Meghan Markle pasta recipe is creamy, quick, and unbelievably easy. With cherry tomatoes, garlic, spinach, and Parmesan, it’s a royally delicious dinner in just 15 minutes.
Ingredients
- 7 cloves garlic, sliced
- 25 cherry tomatoes, halved
- 1 tablespoon olive oil
- Salt, to taste
- 1/2 pound spaghetti
- 3.5 cups boiling water
- Big handful baby spinach
- 1/3 cup Parmigiano Reggiano cheese, grated
Instructions
1. In a large deep pan, add garlic, tomatoes, olive oil, and two big pinches of salt.
2. Place dry spaghetti on top. Break in half if needed to fit the pan.
3. Pour in boiling water until ingredients are just covered.
4. Bring to a boil, cover, and cook on medium-high for 8–12 minutes. Stir often to avoid clumping.
5. Once al dente, remove from heat and stir in spinach until wilted.
6. Add grated Parmesan and stir until a creamy sauce forms. Serve hot.
Notes
Use gluten-free pasta for a GF version.
Swap cheese for vegan Parmesan to make it dairy-free.
Add chili flakes for spice or protein like chicken sausage for variety.
