Description

Mexican Cabbage Slaw is a crunchy, fresh taco topping made with shredded cabbage, carrots, lime juice, herbs, and spices. This quick slaw adds brightness, color, and refreshing flavor to tacos, burrito bowls, and grilled dishes.


Ingredients

  • 3 cups green cabbage, thinly shredded
  • 2 cups red cabbage, thinly shredded
  • 1 cup carrots, shredded
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 clove garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons green onions, sliced
  • 1 small jalapeño, finely diced (optional)
  • 1/4 cup crumbled cotija cheese (optional)

Instructions

1. Wash and thinly shred the green and red cabbage using a sharp knife or mandoline.

2. Place the shredded cabbage in a large mixing bowl.

3. Add shredded carrots, diced jalapeño if using, sliced green onions, and chopped cilantro.

4. In a small bowl combine lime juice, olive oil, honey or maple syrup, apple cider vinegar, salt, black pepper, cumin, chili powder, and minced garlic.

5. Whisk the dressing until well blended.

6. Pour the dressing over the cabbage mixture.

7. Toss everything together until the vegetables are evenly coated.

8. Let the slaw rest for about 10 minutes so the cabbage absorbs the dressing.

9. Just before serving, sprinkle with crumbled cotija cheese and additional cilantro if desired.

  • Thinly slice cabbage for the best crunchy texture.
