Description
One-Pan Honey Garlic Chicken and Rice is an easy weeknight dinner made with juicy chicken, fluffy rice, and a sweet savory garlic sauce. A comforting one-pan meal perfect for busy days.
Ingredients
4 chicken thighs
1/4 cup honey
1/4 cup soy sauce
4 cloves garlic, minced
1 cup long-grain white rice
2 cups chicken broth
2 tbsp olive oil
1 cup mixed vegetables (carrots and peas)
Salt to taste
Black pepper to taste
Green onions for garnish
Sesame seeds for garnish
Instructions
1. Pat chicken thighs dry and season with salt and pepper.
2. Mix honey, soy sauce, and garlic in a bowl to create marinade.
3. Coat chicken with marinade and let sit for 15 minutes.
4. Heat olive oil in a large pan over medium-high heat.
5. Sear chicken for about 5 minutes per side until golden, then remove.
6. In the same pan, sauté vegetables for 2-3 minutes.
7. Add rice and stir briefly.
8. Pour in chicken broth and reserved marinade, then mix well.
9. Return chicken to the pan on top of rice.
10. Cover and cook on low heat for 20 minutes until rice is tender and chicken is cooked through.
11. Let rest for 5 minutes, garnish with green onions and sesame seeds, and serve.
Notes
Use jasmine rice for extra fragrance.
Add extra vegetables for more nutrition.
Store leftovers in fridge for up to 4 days.
Freeze portions for up to 2 months.
