Ingredients
12 oz spaghetti
2 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
1 bell pepper, diced
2 cups spinach
3 cups vegetable broth
2 cups tomato sauce
1 cup cheddar cheese, shredded
1 cup parmesan cheese, grated
1/2 tsp black pepper
1/2 tsp red pepper flakes (optional)
Fresh basil for garnish
Instructions
1. Chop onion, garlic, and bell peppers.
2. Heat olive oil in a large pot over medium heat.
3. Add onion and garlic, sauté until fragrant.
4. Add bell peppers and spinach, cook until softened.
5. Pour in vegetable broth and tomato sauce.
6. Bring to a boil, then add spaghetti.
7. Cook until pasta is tender and liquid reduces.
8. Reduce heat and stir in cheeses until melted.
9. Let rest for a few minutes.
