Description

Slow cooker corned beef is a comforting, easy dish packed with flavor. This recipe delivers tender slices, perfectly cooked veggies, and a broth that’s rich and satisfying.

Ingredients

Scale
  • 1 3-4 lb. corned beef with spice packet flat cut
  • 4 carrots cut into pieces
  • 8 small red potatoes halved or quartered depending on size
  • 1 onion peeled cut into chunks
  • 4 cups beef broth
  • 1/2 head cabbage coarsely chopped

Instructions

  1. Rinse corned beef under cold water.
  2. Place brisket into slow cooker fat side up.
  3. Add beef broth to come halfway up the meat.
  4. Sprinkle meat with seasoning packet.
  5. Cook on low for 8-9 hours.
  6. Halfway through cooking, add potatoes, carrots, and onion.
  7. Add cabbage one hour before ready to serve.

Notes

Use leftovers for sandwiches or hash. Flat cut brisket gives best slices. Add bay leaf or garlic for extra flavor.
