Description

Bold and saucy gochujang turkey spooned into crisp lettuce leaves with fresh vegetables and herbs. A high-protein, low-carb dinner ready in just 35 minutes.


Ingredients

  • 1 pound lean ground turkey
  • 2 tablespoons gochujang
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil
  • 1/2 cup red bell pepper, finely diced
  • 1/2 cup shredded carrots
  • 1/4 cup green onions, sliced
  • 1–2 heads butter or Bibb lettuce, leaves separated
  • 1/2 cup cucumber, diced
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons chopped fresh cilantro
  • Optional:
  • Sriracha to taste
  • 2 tablespoons crushed peanuts
  • 1 cup cooked jasmine rice

Instructions

  1. Separate lettuce leaves, rinse, and pat dry thoroughly. Prepare all vegetables and set aside.
  2. In a small bowl, whisk together gochujang, soy sauce, rice vinegar, honey or maple syrup, and sesame oil until smooth.
  3. Heat olive oil in a skillet over medium-high heat. Add ground turkey and cook 5–7 minutes, breaking apart, until browned and fully cooked.
  4. Add garlic and ginger. Cook 1–2 minutes until fragrant.
  5. Stir in diced bell pepper and shredded carrots. Cook 2–3 minutes until slightly softened.
  6. Pour in the prepared sauce. Reduce heat and simmer 3–4 minutes until thickened and glossy.
  7. Remove from heat and stir in half of the green onions.
  8. Spoon 2–3 tablespoons of turkey mixture into each lettuce leaf.
  9. Top with cucumber, remaining green onions, cilantro, sesame seeds, and optional toppings. Serve immediately.
