Description
A rich and creamy strawberry crumble cheesecake layered with buttery crumble, smooth cheesecake filling, and sweet strawberry topping. Perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup unsalted butter (cold, cubed)
- 1/4 teaspoon salt
- 500g cream cheese (softened)
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1/2 cup sour cream
- 2 cups fresh strawberries (chopped)
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 2 tablespoons powdered sugar (optional)
- 1/2 cup oats (optional)
- 1/2 teaspoon almond extract (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 pan with parchment paper.
2. Mix flour, granulated sugar, brown sugar, and salt in a bowl.
3. Add cold butter and mix until crumbly. Reserve one-third for topping.
4. Press remaining crumble into pan and bake for 10–12 minutes.
5. Beat cream cheese until smooth, then mix in sugar.
6. Add eggs one at a time, then vanilla and sour cream.
7. Pour cheesecake mixture over crust.
8. Mix strawberries with cornstarch and lemon juice, then spread over filling.
9. Sprinkle reserved crumble on top.
10. Bake for 35–40 minutes until set.
11. Cool, then chill for at least 2–3 hours before slicing.
Notes
- Chill overnight for best texture and clean slices.
- Do not overmix cheesecake filling to avoid cracks.
- Use fresh strawberries for best flavor.
- Store in refrigerator up to 5 days or freeze up to 2 months.
